Turns out fizz alone won't keep your NA beer safe. Researchers found what will.

Food scientists at the University of Arkansas have worked out how to keep non-alcoholic beer safe from foodborne pathogens now that there's no alcohol around to do that job for you. Testing pH, carbonation, and hops against five common pathogens, including Salmonella, E. coli, Listeria, Pseudomonas, and Bacillus, they found the strongest protection came from a pH of 4.2 or lower paired with moderate hops and carbonation. Best of all was kettle souring, the technique behind tart styles like Berliner Weisse, which wiped out all five pathogens within two weeks. Full study's in Frontiers in Microbiology.

Scott Lafontaine, the University of Arkansas food chemist who co-authored the study, on the assumption it puts to rest:

"A common assumption is that any CO2 means a product is food safe, and this study shows that simply is not true. Lower carbonation levels may still permit growth, and carbonation does not affect every pathogen in the same way."

I had no idea carbonation was ever assumed to be doing that kind of work on its own, which makes this more interesting, not less. The fizz in a lot of NA beer isn't the safety net people might assume it is, especially at lower carbonation levels. That's not a reason to eye your fridge suspiciously. It's a reason to root for breweries treating recipe design as a safety decision, not just a flavor one. And it's got me wanting to track down more NA sours, now that kettle souring looks like it's pulling double duty as both a style choice and a safety net.
